A Total Mishmash That Totally Works

When I was chopping last night, first I thought, it will be another I Grilled All Weekend and I’ve Got Leftover Salad, and then I thought, no probably more Greek Salad with corn, or maybe, Cacio e Pepe Corn on the Cob Salad? And then I thought, Is this going to be really weird together? Turns out, it’s not.

Approximate quantities: 1 head romaine, roughly chopped; 2 kirby cucumbers, roughly chopped; 12 ounces grilled chicken, roughly chopped; 12 ounces sugar snap peas, strings removed, ends trimmed, and cut lengthwise; kernels of 1 ear of grilled corn; 6 artichokes, quartered; drizzled with olive oil, Cholula’s chili lime, Parmesan cheese, salt, and pepper

Serves 2 as a main.

In salad Tags grilled corn, romaine lettuce, cucumbers, artichokes, butter and sugar corn, grilled chicken breast, nyt cooking, parmesan cheese, sugar snap peas

I Grilled All Weekend and I've Got Leftovers

Approximate quantities: 5 ounces baby kale; 6-8 French breakfast radishes, quartered, length-wise; 15 orange cherry tomatoes, halved; 1 cubanelle pepper, cut into thin strips; 2 ears of grilled corn; 1 1/2 grilled chicken breasts, roughly chopped; 1 avocado, cubed; drizzled with BBQ sauce, apple cider vinegar, olive oil, salt, and pepper to taste

Serves two as a main.

In salad, grilling Tags avocado, grilled corn, butter and sugar corn, cubabelle pepper, grilled chicken breast, ina garten, tomato, french breakfast radish, baby kale

A Monday night detox after a particularly indulgent weekend. 

Approximate quantities: 5 ounces baby kale; 1 lb of sauteed garlic green beans; 1 cup of avocado-lemon-rice; 2 tablespoons parsley, finely chopped; 1 lb grilled chicken breast, roughly chopped; drizzled with olive oil, lemon juice, salt, and pepper

Serves two as a main.

In salad Tags avocado, baby kale, parsley, grilled chicken breast, grilled green beans

Tortilla-less Tortilla Salad

An all Trader Joe's middle-of-a-busy-week-tortilla salad minus the tortilla. But if you have chips around, toss them in!

Approximate quantities: 3-4 cups of chopped kale; 1 cup quick-cooking brown rice; 1 cup black beans; 3 carrots, sliced into thin disks; ½ of a cucumber, sliced into thin disks; 1 avocado, cubed; 1 cup sugar snap peas, strings removed, ends trimmed; 2 cups of grilled chicken breast, roughly chopped; drizzled with olive oil, Cholula's chili lime hot sauce, salt, pepper, and grated Tillamook cheddar cheese

Serves four as an appetizer or two as a main.

In salad Tags avocado, chili lime hot sauce, salad, cucumbers, grilled chicken breast, black beans, cheddar cheese, carrots, kale, brown rice, sugar snap peas
